Bliss: Surprising My Parents

Happy June all! I had been taking a break from my regular blogging posts last month to refocus my attention to some exciting new projects and one of them was throwing together a surprise 30th Anniversary party for my parents. My brother and I were too young at the time of their 25th Anniversary to put something together so we figured 30 years was a great milestone to show our parents how much we really appreciate them.

Let me first say the amount of stress I endured from trying to keep this all a secret from my mom who is the biggest detective in the world was no easy feat. The 30th Anniversary theme was pearls so we decked the party in white, ivory, and pearls and made it a ‘White Attire Party’. Oh yea, that was another challenge, getting my parents to wear all white to their own party. We told them it was a white dinner party at a family-friend’s house and that the party started at 8pm when really it was 7pm. The strings I had to pull and having my brother come in from out of town to surprise our parents were all worth it in the end to see the joy on their faces.

So this is all for you Mom and Dad, thanks for showing us what selfless love really is, not the easy fairy tales, but true working love. Happy 30 and beyond!

Finding Center, Finding Bliss

20140511-150913.jpgSeeking happiness, chasing bliss are all attributes that we aspire to. Mine just happen to all derive from the teachings of my mother. She taught me to meditate and planted the seed of my ‘bliss seeking’ philosophy on life. I hope to do the same and carry on her words of wisdom and my love of yoga with my children one day. Thank you Mom for teaching me how to find my center, and for keeping me grounded. Happier homes make happier people, and happier people make a happier world.

Tips for making the perfect Crepe every time

  1. Have the right consistency. The batter’s consistency should resemble heavy cream. If it’s thick like pancake batter you can thin it out with milk. The batter should also be smooth. If there are lumps you can strain the batter.
  2. Use the right pan. Go for a pan that heats evenly. I like using a non-stick anodized pan.

Gluten-Free Carrot Cake Fail & Success

Gluten-free baking from scratch is a beast of it’s own, one that I’ve been avoiding for the longest time. Many attempt, but few succeed. I finally took up the challenge this weekend to make a gluten-free carrot cake, and just for fun I thought it’d be a good idea to try making it vegan as well. It was a terrible idea and I failed miserably. Two days, wasted batter, and a disappointing spirit later I cut my losses. So all my efforts weren’t all for nothing (and because I still wanted carrot cake) I reached for a box of Betty Crocker’s Gluten Free Cake Mix.

Why I Love It

  • No hassle
  • No preservatives or artificial flavors
  • Tastes like regular cake, you can’t tell the difference
  • Made with Rice Flour

The only down side is it’s made with sugar instead of stevia, which is an ingredient I generally use to sweeten my food with. When I get the courage to try my hand at gluten-free baking again I’ll be sure to sub in the stevia. Stay tuned :)

Yoga Night at the Museum

Happy Spring! If you didn’t know already, Thursday was the official start of Spring, and like seasons past I like to ring in the new solstice with some epic yoga. Many yoga groups and schools around the world hold open events to the public during the Spring and Summer solstices especially. Mine just happened to hold it in an art museum this year! The only event that could possibly top this experience would be going to New York for Solstice in Times Square this summer. I didn’t get to go last year, but hopefully I’ll be able to make it there on June 21st. (Two hippie) fingers crossed!

Healthy Glazed Peaches Recipe

As promised from yesterday’s post  A Peachy Sunday Morning here is the recipe for Glazed Peaches. It’s dairy free, gluten free, naturally soy free, and sugar free. For the pancake recipe check out Almond-Oat Flour Pancakes. Enjoy, share, and let me know what you think. Happy Monday!

In a sauce pan on medium heat mix for 3 minutes:

  • Melt 2 Tablespoons of Coconut oil
  • Add sliced peaches
  • 1 teaspoon stevia

Add the next ingredient in and stir for 1 minute:

  • ¼ teaspoon nutmeg

Add remaining ingredients and simmer on medium heat for 10 minutes:

  • ¼ cup Orange Juice
  • 1/3 cup Water

Remove from heat and let cool so the sauce can thicken.

*Optional

For a slightly thicker sauce you can add ¼ teaspoon Xantham Gum

A Peachy Sunday Morning

Started my day off with some yoga per my usual morning ritual and ended my morning making Chocolate Chip Almond-Oat Flour Pancakes with glazed peaches and reading some film scripts in bed. Who knew peaches and chocolate chips would make such a good combo. I will be posting the recipe for the sugar-free glazed peaches later, so keep an eye out for it.
